These are for Bread &Butter pickles and its so easy even I can do it.
For my diabetic husband I reduced the sugar with splenda and it works great
4 Qrt Sliced Medium Cukes [about 20]
6 medium onions sliced
2 green peppers chopped
3 cloves of garlic
1/3C coarse salt
5 C sugar or [substitute splenda ] all or partly
**************note I use 1/2 splenda
3 C cider vinegar
1 1/2 tsp. Tumeric
1 1/2 tsp celery seed
2 tblsp mustard seed
Do not pare the cukes. slice thin. Add the onion slices, peppers and whole garlic cloves. add salt and cover with cracked ice. mix thoroughly.
Let stand 3 hours.
Drain well.
Combine remaining ingredients and pour over the cuke mix. Bring just to boiling.
Seal in hot sterilized jars. Makes 8 pints.
