For most of my work I use old graded matt paper or modern VC paper. I am not a fan of old paper but some of them are just great and I don't find any similar surface now.

I often work with agfa portriga or record rapid  , and also ilford ilfomar . I also have some stock of old french paper like guilleminot or lumiere that I use when I need a good Chaois paper.

I appreciate modern paper  and I use them a lot with split grade printing and f stop method. But I find that they are great in Glossy surace , but less interesteing in matt an semi matt surface. The real mat I appreciate is the Ilford  mat MGIV. but I don't find any similar mat in modern ( Forte did but they are not available any more).

So I try to get the good paper with each series. And some seires are really vintage as I don't even knnow if I could ever print some more on the same paper ( hpoe to find some more ilfomar)
