Bacon & Egg Breakfast Rolls


6 servings

For a hearty start to the day, stuff a roll with some favorite foods, Get your Vitamin C, too, by serving with orange segments or adding tomato slices to the sandwich.

  6 uncut Kaiser rolls
  3 slices bacon
  1 cup sliced fresh mushrooms (about 4 oz.)
  1/2 cup chopped onion
  1/2 cup chopped green pepper
  6 eggs
  1/4 cup skim or low-fat milk
  6 thin slices lean cooked ham
  6 thin slices reduced-fat Swiss or Muenster cheese

Slice tops off rolls about 3/4 inch from top. With a fork, scrape out the insides of bottom, leaving about 1/2-inch wall all around. Save crumbs for another use. Set rolls aside.

In 10-inch omelet pan or skillet over medium heat, cook bacon until crisp. Drain well. Crumble. Pour off and discard fat. Add mushrooms, onions and pepper to pan. Cook until tender but not brown, about 5 minutes. Stir in drained bacon.

In medium bowl, beat together eggs and milk until blended. Pour into pan over vegetables. As mixture begins to set, gently draw an inverted pancake turner completely across bottom and sides of pan, forming large soft curds. Continue until eggs are thickened and no visible liquid egg remains. Do no stir constantly.

Spoon egg mixture into hollows of reserved rolls. Top each roll with 1 slice each of ham and cheese. Broil about 6 inches from heat until cheese is melted, about 3 minutes. Cover with reserved roll tops.

 

 

 


~~~~~ Sugar Free or Low Sugar Recipes~~~~~

 
 

SUGAR FREE BANANA PUDDING CAKE
 from COOKS.COM

1 Angel Food cake (split in half)
2 bananas, sliced
2 sm. sugar free instant pudding (fixed to serve)

Place half of the cake in the bottom of a large towel. Arrange bananas on top of cake, pour 1 pre-fixed pudding over that. Put the other half of cake on top and pour remaining pudding over cake. Chill and serve.

 

 


~~~~~~~~Holiday Ideas~~~~~~~~

Monster Toes

Kids will love the gross-out factor of this tasty finger food. Parents will love the fact that it is candy-free. Try some for a party or pre-trick-or-treating dinner.

 Ingredients:

Cocktail wieners
6-inch tortillas
Ketchup or mustard
Toothpicks

Directions

1. Heat the oven to 350 degrees. Cut a wedge into the end of each cocktail wiener to make a toenail.
2. Cut the tortillas into strips about 4 inches long and 3/4 inch wide. Discard the ends.
3. Soften the strips in the microwave between damp paper towels for 10 to 30 seconds.
4. Roll each wiener in a tortilla strip and secure with a toothpick.
5. Bake for 7 to 8 minutes. Remove them from the oven, then fill the toenail with ketchup or mustard. Remove the toothpicks before serving
.

Pumpkin Treat Carton

This makes a wonderful container to send home treats after a Halloween party at school, daycare or your home.  Or make a few of these special treat containers for your good friends and deliver them while you are trick or treating!

Materials you will need for the pumpkin container are 
  

 

an empty 2 L (1/2 gallon) milk carton, 

 

a printer (optional), 

 

glue or tape, 

 

scissors, 

 

black construction paper

 

 

Instructions

 Make  the pieces just by cutting them out of construction paper. 

 

Cut out the pieces.
   

 

Cut the top off a milk carton and discard the top (or save it for a different craft).  You can cut off as much of the top as you like... it depends on how tall you want your container to be.
  

 

Cover your milk carton with orange construction paper (it takes about 2 pieces).
 

 

Tape or glue the eyes, nose, mouth, leaves and stem onto the front. 
  

 

Cut out a strip of cardboard or construction paper about 10 inches long and glue to the sides of the container to use as a handle (or use the template piece).

Blonde in Vegas 
A blonde was in Vegas vacationing with friends. She was standing in front of the candy machine and put two coins in, turned the knob and a candy bar fell out.

She picked up the candy bar and put it in her pocket, then she proceeded to put two more coins into the slot and turned the knob, again a candy bar fell out and she put it in her pocket.

She put two more coins into the machine and again turned the knob producing yet another candy bar.

A man was watching from a short distance away and walked up to her, he said "Excuse me Miss? What are you doing?"

She said, "Duh! I'm winning here!"

Flu Season -- got any advice ??

Before we get to that dreaded flu season -- can anyone offer any advice they have found to work ??

I know I use the hand santitizer all year and I know this works well -- keeps reminding you to keep your hands clean.

When you come out of any store -- good idea to use when you get in the car.

I keep a small bottle of the hand sanitizer in my purse so I will always have it on hand.

  • Have dinner ready. Plan ahead, even the night before, to have a delicious meal ready on time for his return. This is a way of letting him know that you have be thinking about him and are concerned about his needs. Most men are hungry when they get home and the prospect of a good meal is part of the warm welcome needed.
  • Prepare yourself. Take 15 minutes to rest so you'll be refreshed when he arrives. Touch up your make-up, put a ribbon in your hair and be fresh-looking. He has just been with a lot of work-weary people.
  • Be a little gay and a little more interesting for him. His boring day may need a lift and one of your duties is to provide it.
  • Clear away the clutter. Make one last trip through the main part of the house just before your husband arrives. Run a dustcloth over the tables.
  • During the cooler months of the year you should prepare and light a fire for him to unwind by. Your husband will feel he has reached a haven of rest and order, and it will give you a lift too. After all, catering to his comfort will provide you with immense personal satisfaction.
  • Minimize all noise. At the time of his arrival, eliminate all noise of the washer, dryer or vacuum. Encourage the children to be quiet.
  • Be happy to see him.
  • Greet him with a warm smile and show sincerity in your desire to please him.
  • Listen to him. You may have a dozen important things to tell him, but the moment of his arrival is not the time. Let him talk first - remember, his topics of conversation are more important than yours.
  • Don't greet him with complaints and problems.
  • Don't complain if he's late for dinner or even if he stays out all night. Count this as minor compared to what he might have gone through at work.
  • Make him comfortable. Have him lean back in a comfortable chair or lie him down in the bedroom. Have a cool or warm drink ready for him.
  • Arrange his pillow and offer to take off his shoes. Speak in a low, soothing and pleasant voice.
  • Don't ask him questions about his actions or question his judgment or integrity. Remember, he is the master of the house and as such will always exercise his will with fairness and truthfulness. You have no right to question him.
  • A good wife always knows her place.

From one pumpkin to another!!!!!!!

A woman was asked by a coworker, "What is it like to be a Christian?"

The coworker replied, "It is like being a pumpkin."  God picks you from the patch, brings you in, and washes all the dirt off of you.  Then He cuts off the top and scoops out all the yucky stuff.

He removes the seeds of doubt, hate, and greed.  Then He carves you a new smiling face and puts His light inside of you to shine for all the world to see."

 
This was passed on to me by another pumpkin.  Now it's your turn to pass it to other pumpkins.

I liked this enough to send it to all the pumpkins in my patch.

recipe ---- Pumpkin Pie





Pumpkin Pie



Makes one 9-inch single-crust pie

For the crust:



1 cup whole wheat pastry flour
1/4 teaspoon sea salt
1/3 cup plus 1 tablespoon unsalted, cultured organic butter, well chilled
2 to 3 tablespoons cold water





For the filling:


1 sugar pumpkin
2 eggs
1 1/2 cups organic cream
1/2 cup unrefined cane sugar
1/2 teaspoon sea salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon freshly grated nutmeg
1/8 teaspoon ground cloves



Preheat the oven to 350°F.

Combine the flour and salt in a large mixing bowl. Cut the butter into 1/4-inch cubes and add them to the flour mixture. With your fingertips, quickly and deftly rub the butter into the flour to make a dry, crumbly mixture. Sprinkle 2 tablespoons of water over the mixture. Using a fork, rapidly stir the dough until it gathers into clumps. If the mixture seems dry, add more water to hold the dough together. Gently form the dough into a disk. Wrap in plastic and place in the refrigerator to rest and chill for 15 minutes to 1 hour.
Meanwhile, cut the pumpkin in half, remove the seeds, place the pumpkin halves in a pan, shell side up, and bake for 1 hour or until the pumpkin is tender and exudes liquid and the shell starts to sag. Scrape the pulp from the shell and purée it with a fork or potato masher or in a blender. Measure 2 cups of the purée and set it aside. Reserve any additional pumpkin for another use.
Lightly butter a 9-inch pie pan. Place the dough on a lightly floured surface and, starting from the center out, roll the dough to about 2 inches larger than the size of the pan. Loosen the pastry, fold it in half, lift it and unfold it into the pan. Press it into place, trim off the excess dough and crimp the edges.
Increase the temperature of the oven to 425°F.
In a large mixing bowl lightly beat the eggs. Add the purée and the remaining ingredients and stir to blend. Pour the mixture into the dough-lined pan. Bake for 15 minutes and then reduce the heat to 350°F and bake an additional 45 minutes or until a knife inserted comes out clean. Allow to cool slightly before serving.
