Recipe: Chinese Fried RicePosted Aug-26-06 15:28:40 PDT Ingredients: 4 cups cooked rice that has cooled off 4 tablespoons oil 3 beaten eggs 1 teaspoon salt Dash of pepper 1 finely chopped scallion Break rice apart with wet hands. Add rice to heated wok and stir fry rapidly. Stir with spatula constantly while heating rice. Add eggs to middle of rice and stir until they become scrambled. Then stir until scramled eggs are mixed with rice. Add other ingredients and stir fry for 30 seconds.
