Vegetable of the week is Summer Squash

Summer Squash

  • My mom makes the best squash casserole. It’s creamy and cheesy with the right amount of pepper. Mine never comes out as good as hers. It’s the perfect sittin’ on the porch, down-home Southern comfort dish.
  • Spaghetti Squash is one of my favorite dishes. It’s a beautiful pale gold color and it has a light, sweet flavor. Bake it and rake a fork through the inside and you get lovely strands that resemble spaghetti or angel hair noodles. You can add your favorite pasta sauce. But I prefer just tossing it in olive oil, garlic, salt, and pepper.
  • If you’re lucky and have squash in your garden, try using squash blossoms as a floral arrangement. Float them in a shallow bowl with some water and some colored marbles. Arrange some tea-light candles around the bowl, dim the lights, and voila! You have a romantic and creative centerpiece for your dinner table.

Vegetable of the Week is.....Snap Beans

Snap Beans

From simple to elegant, this versatile vegetable will add color and class to any table. They come in various colors - green, yellow, even purple and sizes - long, short, round, flat, and wide, skinny.Some are quite snappy, some are extra juicy. The dishes you can conjure up are countless including appetizers, salads, soups, and sides. They can be steamed, boiled, blanched, sauteed, roasted, grilled, nuked, and pickled.

  • They make a great appetizer or side dish in this quick and easy recipe. Boil beans until crisp-tender and saute bacon or prosciutto. Cook both until about 90% done, you'll want them a little undercooked for the next part. Drain both. Make bundles of about 10 beans. Trim and position one end of the beans so that they are nearly even so that the beans will stand upright when served. Wrap each bundle around the middle in a thick slice of bacon or prosciutto and secure with toothpick. Season with garlic powder and salt, or your favorite seasoning. Bake at 400F for 10-15 minutes.
  • Leather Britches. I've heard tales that Native Americans in the southeast US used to make something called Leather Britches. They would string up a line of snap beans and hang them in the sun until they turned brown like leather britches. Then they would eat them. I don't know if it's true, but I've always liked to hear the story and imagine what they would taste like.
  • Looking for an inexpensive, fun, and easy centerpiece for your next dinner party or social event? Try using vegetables, instead of flowers. There's all sorts of combinations you can make with some short skewers and imagination. You can make a colorful and unique centerpiece by skewering green beans and green onions longways with radishes, tomatoes, and carrots on top with salad greens or lettuce as the 'foliage' or base. And best of all it's edible.
